the inspiralized week

you guys know I bought a vegetable spiralizer a few months ago and have been in love ever since. if you don't have one, it will change your life. I've been chugging along making zucchini noodles at least once a week, completely satisfied but also aware that there is more out there in the world of spiralization to be discovered...

AND THEN my sister gave me ali maffucci's cookbook inspiralized for my birthday. I spent the weekend exploring the cookbook and inspiralized blog for meal plans... I spiralized zucchini, broccoli, and parsnip. I really can't tell you how proud of myself that I am - I have always wanted to eat a vegetable based diet but it's hard to get started if you don't know where to start. so if you're interested, this is your starting point. buy the spiralizer and cookbook, check out the blog, and make a grocery list! here's what I've been cooking...

bacon shrimp zucchini noodle scampi from I've already made this recipe twice and I started to make 1.5x the recipe so that I can take it for lunch during the week.

garlic broccoli noodles with toasted pine nuts from - this dish is very light, I would recommend it for dinner or even as a side dish. it is not super filling.

spicy garlic parsnip noodles with crab from the inspiralized cookbook. so I love parsnips, stephen does not. for some reason he thought the parsnip was potato (and I didn't correct him), so I did get him to try this but he quickly realized it was parsnip... "this potato tastes funny."

and lastly, our standby zucchini noodles with vodka pesto sauce and turkey meatballs. this is so easy and yummy - make the noodles, toss them in your favorite sauce and add meatballs. we like to buy frozen turkey meatballs but you could make your own meatballs, buy vegetarian meatballs, etc.
