nothing celebrates sweet summertime like key lime pie! this key lime pie is the best of the best, there is absolutely no comparison. the crazy thing is that it only takes about 10 minutes to get this pie baking in the oven and it's not even a family recipe, it comes straight off the nellie and joe's key lime juice bottle. although, we do jazz it up a bit with a homemade graham cracker crust which makes all the difference.
next time you are looking for a sweet treat to make this summer or if you're still in search of a fourth of july dessert to add to your spread, I highly recommend this easy breezy key lime pie served with a dollop of whipped cream on top. light + refreshingly sweet + tart at the same time, it melts in your mouth.
there is nothing like a homemade graham cracker pie crust. simple and delicious. if you have some time to find biscoff cookies (the cookies that delta airlines serves onboard) - they also make an amazing pie crust.
-several sheets of honey graham crackers
-butter, about 1/4 of a stick melted
-salt, about a teaspoon
-14 oz. can sweetened condensed milk
-3 egg yolks (discard whites or save for alternate use)
-1/2 c. nellie & joe's key lime juice
1. place graham crackers into a large ziploc bag, crush grahams using a mallet or wine bottle. pour graham cracker crumbles into the pie plate, add melted butter and a teaspoon of salt.
2. using your hands, rub butter and salt thoroughly into crumbs. press mixture into pie plate to lie entire base and sides of the plate, forming a heightened crust around the perimeter using a spoon if necessary.
3. combined milk, egg yolks, and key lime juice in a small bowl, blending until smooth. pour filling into pie plate and bake for 15 minutes at 350 degrees.
4. allow to stand 10 minutes before refrigerating. pie best served cold, garnish with whipped cream and lime slices.
