petite fruit pizzas

fruit pizza reminds me of being a kid. I remember baking an entire pizza-sized round slab of sugar cookie dough then carefully icing and topping with a ton of fruit. my childhood version was messy and not exactly visually stunning - but it was delicious!

fast forward to grown-up days: now I make the same fruit pizza (equally tasty) with less mess, more visual appeal, and an easier serving size. out with the awkward pizza slice, in with the easy-to-eat cookie! top with whatever fruit you like - I also love to make these for fourth of july with only red and blue fruit.

-1 (18 oz.) pkg (20 cookies) Pillsbury Ready to Bake refrigerated sugar cookies (or make your own homemade dough)
-1 (8 oz.)  cream cheese, softened
-2 T. frozen limeade concentrate, thawed
-1/2 c. powered sugar
-abundance of fruit: sliced strawberries, raspberries, blueberries, etc

1. bake cookies as directed on package. cool 10 minutes until completely cooled.
2. meanwhile, in medium bowl, mix cream cheese with limeade concentrate and powdered sugar. beat until smooth.
3. spread each cookie with 1 T. cream cheese frosting. arrange fruit on top of each cookie. 
4. cover and refrigerate finished cookies for 1-2 hours before serving! keep refrigerated after serving.
