blueberry streusel muffins

roses are red. berries are blue. muffins are sweet. so are you!

ok, I had to do it especially since there's no pink or red coloring in this valentine's treat. stephen's been working extra late due to tax season and he's not a huge fan of sweets. these muffins are not too sugary and have a very natural, lightly sweet taste from the blueberries (there's only 1/2 c. white sugar in the recipe). if you like a more sugary taste, I would add more sugar or vanilla extract. enjoy!

topping ingredients:
-1/4 c. flour
-1/4 c. packed brown sugar
-1/4 t. ground cinnamon
-2 T. cold butter

muffin ingredients:
-3/4 c. milk
-1/4 c. vegetable oil
-1 egg
-2 c. flour
-1/2 c. sugar
-2 t. baking powder
-1/2 t. salt
-1 1/4 c. fresh blueberries

1. preheat your oven to 400 degrees. place 12 liners in a muffin pan. in a small bowl, combine all ingredients for streusel together. use a fork to mash up the butter. set aside at room temperature.
2. in large bowl, whisk together the egg, milk, and oil. then add flour, sugar, baking powder, and salt all at the same time. use a wooden spoon to mix together smoothly. gently add in the fresh blueberries.
3. drop the muffin mixture evenly into each muffin liner. top each muffin with an even amount of streusel.
4. bake for 20 minutes.
